Abstract
Observations of food handlers’ practices have many uses. Describes the use of a notational analysis technique to monitor and analyse specific food safety actions of caterers. A total of 115 food handlers from 29 catering businesses were observed carrying out 31,050 food preparation and hygiene actions in their workplace. Notational analysis was found to offer little advantage, compared to traditional observation methods. However, this technique did allow tracking of sequential events and was successful in identifying and recording a greater number of cross‐contamination events than would have been highlighted using traditional approaches. The results demonstrated that, based on hygiene guidelines, food handlers were required to implement de‐contamination actions on a large number of occasions. These de‐contamination actions were frequently inadequately conducted. To improve standards of food hygiene in catering there is a need to minimise the requirements for de‐contamination activities thereby reducing the potential for cross‐contamination.

Abstract
Utilises social cognition models to determine the beliefs, attitudes and knowledge of consumers towards food safety. The main aim was to determine the underlying factors influencing consumers’ implementation of specific food safety practices in the home. The research was conducted in two stages. First, salient beliefs of 100 consumers towards food safety were obtained using open‐ended questions. Second, the food handling practices of 40 consumers were observed and their food safety attitudes and knowledge determined using structured questionnaires. Disparities were shown between participants’ knowledge of specific hygiene practices and their implementation of these practices. Participants demonstrated a lack of and/or inadequate implementation of a number of hygiene practices, including a lack of handwashing, poor hand‐washing technique and inadequate cleaning of surfaces. The results suggest measures of perceived behavioural control, perceived barriers and perceived risk may provide developers of food safety intervention materials with more useful information compared with measures of knowledge or intention.

Purpose
The purpose of this paper is to analyze the food safety knowledge and practices of catering employees in one city in the Southwestern United States.
Design/methodology/approach
The researchers administered a 20‐question food safety survey to catering employees and observed their actions while performing catering duties.
Findings
The paper finds that employees earned a mean score of 71.5 per cent on the 20‐question survey. They were most knowledgeable about personal hygiene, but did not practise proper hygiene during the catering functions. The most common food safety violations were not wearing gloves when required, not washing hands, not checking food temperatures, and not properly covering foods in warming and/or refrigeration units.
Research limitations/implications
Lack of interest and concern about bad publicity prevented many caterers from participating in the study. The presence of observers during a catering event could have affected employees' performance.
Practical implications
The results showed need for improvement in both knowledge and practice of food safety and sanitation and significant differences in knowledge between English‐ and Spanish‐speaking respondents and employees of independent versus corporate operations.
Originality/value
The paper reveals that the US Food and Drug Administration has a goal of reducing the five risk factors of food‐borne illness by 25 percent by 2010. Catering operations face great challenges in minimizing these risks.

Abstract
The Bureau of Economics in the Federal Trade Commission has a three-part role in the Agency and the strength of its functions changed over time depending on the preferences and ideology of the FTC’s leaders, developments in the field of economics, and the tenor of the times. The over-riding current role is to provide well considered, unbiased economic advice regarding antitrust and consumer protection law enforcement cases to the legal staff and the Commission. The second role, which long ago was primary, is to provide reports on investigations of various industries to the public and public officials. This role was more recently called research or “policy R&D”. A third role is to advocate for competition and markets both domestically and internationally. As a practical matter, the provision of economic advice to the FTC and to the legal staff has required that the economists wear “two hats,” helping the legal staff investigate cases and provide evidence to support law enforcement cases while also providing advice to the legal bureaus and to the Commission on which cases to pursue (thus providing “a second set of eyes” to evaluate cases). There is sometimes a tension in those functions because building a case is not the same as evaluating a case. Economists and the Bureau of Economics have provided such services to the FTC for over 100 years proving that a sub-organization can survive while playing roles that sometimes conflict. Such a life is not, however, always easy or fun.

Abstract
Purpose
This paper aims to depict the pivotal role played by Rose Schneiderman and Frances Perkins in early twentieth-century labor and safety reform in the USA. The paper also examines the contributions made by these notable women through the lens of stakeholder theory and the feminist ethic of care.
Design/methodology/approach
The review process commenced with a comprehensive search for women in history who advocated labor and safety reform and campaigned for safer organizational practices in the workplace. History books, academic journals and newspaper articles, including writings from Schneiderman and Perkins, were the main sources used for this research endeavor.
Findings
Schneiderman and Perkins were both instrumental in playing a major role in fighting for labor and safety reform in the early twentieth century, albeit in different ways. Through their work, there was a heightened understanding of organizations’ duties and obligations to their stakeholders and, in particular, to their employees. They also embodied the feminist ethic of care by being attentive to the needs of others, accepting responsibility and demonstrating competence, while being responsive to their needs.
Originality/value
The influential women in management history are often given scant recognition or not recognized at all. This article highlights the contributions of two women who greatly impacted labor and safety through their struggle for the improvement of working conditions in the USA. The originality of this manuscript also lies in the ethical perspective in which it is grounded.

Abstract
Purpose
Tourism has become a sustainable and viable tool in place making or community revitalization process. Residents’ perceptions of tourism impacts are critical to the sustainability of the tourism industry. This study follows a quantitative research approach to examine how variation in patronage pattern impact its host community using Olumo Rock in Abeokuta, Nigeria, as a case study.
Design/methodology/approach
Primary data from 324 residents are analysed using mean scores, chi-square and one-way ANOVA analysis. Secondary data such as the number of monthly patronage and precipitation and temperature were also analysed.
Findings
The findings revealed that the majority of residents do not patronize the tourism destination and that patronage patterns were seasonal and varied within and between seasons in Olumo. The perception of the residents living adjacent to the tourism destination established that they experienced positive and sometimes negative regardless of the season of the year or the proximity residential neighbourhood to tourism destination.
Originality/value
The findings of this study are sufficiently valuable to merit further investigation. It also provides an important spatial–temporal platform for future tourism impacts variability research in Nigeria and other countries in the tropic region. Furthermore, it is apparent from this study that temporal analyses in a given tourism destination may not translate effectively into another. In this respect, tourism managers in Olumo Rock should be aware of fluctuation in patronage pattern so as to introduction other attraction components at the right season.

Abstract
Purpose
The purpose of this paper is to examine users’ satisfaction and attachment to beaches along the Atlantic Ocean in Lagos, Nigeria.
Design/methodology/approach
This study follows a quantitative research approach. For convenience, data were collected through a systematic random sampling technique, from 682 users in 10 of the 27 beaches in the study area.
Findings
The study revealed that users were overwhelmed by the natural beauty of the beach, the sand that makes sauntering and opportunities to network with other users. The overall results reveal a strong association of users’ reliance (place dependence) and identification with the beaches (place identity). As such, users’ satisfaction, identity with and dependence on the beach environmental attributes were influenced by factors such as uses and activities, comfort and image, sociability and access and linkages.
Research limitations/implications
The study can strengthen the development of design guidelines and social policy for beaches along the Atlantic Ocean, Nigeria. Hence, the view may not be generalizable to other beaches along the Atlantic Ocean with different social, economic, cultural and political settings.
Originality/value
To build meaningful and emotional connections in beaches of developing countries, the paper of this nature is vital as it will aid the development of design guidelines and social policy for beaches through the provision of physical and social features that enhance people-place relationships.

Abstract
This chapter argues that equipping teachers for the essential task of serving as social justice advocates in their classroom and school communities must become the central task of English teacher preparation programs. This argument is positioned against the backdrop of a U.S. sociopolitical climate that has seen increased injustice and violence against youth, teachers, and schools in spite of official policies promising otherwise. The authors describe current efforts to achieve a social justice focus in two spaces that are particularly influential for practicing and aspiring English teachers: pre-service teacher preparation coursework and the National Council of Teachers of English (NCTE), our primary professional organization. The chapter examines the trajectory of research and practice that has arisen in response to the 2012 NCTE standard on social justice in English teacher preparation and offers suggestions to the next generation of educational researchers about increasing the visibility and efficacy of this important work.
